A fabulous healthier alternative for the sweet snack or dessert....

This recipe was inspired by having a poorly daughter home from school and wanting ginger biscuits!
(She has had an upset stomach... its funny how her body is asking for ginger! 😍... soothing for the gut).
I wanted to make a healthier alternative, something a bit more nourishing than flour, butter and sugar!... so this little beauty was born... and it was a total hit with the mini me!! 😍 (breathes a sigh of relief)
These have a consistency somewhere between flapjack and crunchy granola bar, which I love.. but you could probably get them a little more brittle, if you preferred, by lowering oven temperature and cooking for a bit longer.. just keep an eye on them if you do this.
When I say this a healthier recipe, I wouldn't exactly class it as a full on health food, as it contains date syrup, which, whilst healthier and lower in calories than using a refined sugar, is still essentially a sugar of sorts, so should still be consumed sparingly.
That said, this recipe does pack a nourishing punch with oats and chia seeds and is considerably better than the ginger biscuit option 😊
I have topped this with some coconut milk yoghurt, blueberries, strawberries and a sprinkle of linseed... and it was goooooooood!! 💚💚
The recipe is below, my measurements as always on the blog are approximate as I'm not much of a measurer!
But you want to end up with a mix that will stick together when pressed.
The following made 6 cookies with a large cookie cutter.
Ingredients
•200-250g porridge oats.
•4 tablespoons chia seeds.
•1 tablespoon rice flour.
•2 tablespoons date syrup.
•1 heaped tbsp coconut oil.
•1 tsp cinnamon
•half a tsp vanilla powder/extract.
•1 heaped tsp ground ginger.
•pinch Himalayan rock salt.
•1 tablespoon water.
Directions
Preheat your oven to a medium setting.
Mix all of your dry ingredients including salt & spices together and combine well.
Gently melt the coconut oil.
Add this to the dry mix, along with the date syrup and water and stir, fold and mix until all of the dry mix Mixture is coated.
Now simply press into cookie rings around 1cm in thickness, press down with the back of a spoon to compact... and now bake them!
And eat!

Sticky, gooey, moist, dairy free, refined sugar free and full of fruit...
A treaty slice without the sugar crash 💚

This recipe came from the need to use up some very overripe peaches and bananas... I do dislike waste!!
I was about to freeze it all and make some 'nice cream'... but then Cakey inspiration struck....
Eating with compassion for your body doesn't always mean raw veggies and chia seeds... it doesn't mean missing out.. it's just about filling your body with the nutrients it needs and avoiding the stuff that your body won't thank you for... finding a healthier alternative.
This cake is a fantastic example.... I'll outline the recipe below, but I'm not much of a measurer, so the quantities are approximate... but if you bung it all together to end up with a cake mix consistency, then you're onto a winner!
pictured below is a Sticky slice, served with some melted 85% organic chocolate and a blob of coconut milk yoghurt........this tasted utterly decadent and treaty..but you can happily eat this without your body grumbling at you!!

Doesn't look much like a healthy alternative does it!
I added a little coconut blossom syrup to the recipe for extra cakey sweetness, but the 6 whole pieces of fruit in here do a great job of sweetening this naturally 💕
Enough of my babble anyway... here's the good stuff!!
Ingredients:
(Dry ingredients)
•150g Rye flour
•100g coconut flour (I milled some coconut flakes in my blender)
•pinch of Himalayan rock salt.
•2 tbsp chia seeds.
•1 tsp baking powder.
•1 tsp vanilla (I use organic vanilla powder)
(Wet ingredients)
•2-3 tbsp coconut blossom syrup.
•1 egg
•3 very ripe bananas
•3 ripe peaches
•2 tbsp coconut milk drink (or your choice of non dairy milk)
Directions:
Preheat your oven @180 for a fan oven.
Combine all the dry ingredients together well in a bowl.
Mash the 3 bananas with a fork with the non dairy milk (leaving lumps is a good thing!), mix in the syrup and the egg and add to the dry mixture.
Combine all the ingredients well, you should have a nice gooey cake mixture, now stir in chunks/slices of your peaches, remembering to save some for decoration.
Grease a shallow cake tin with coconut oil and pour in the mixture, and bake for around 25 mins.
(Bear in mind that each oven is different, so keep an eye on it during cooking).
And that's it! All that's left to do is serve up a slice and enjoy that gooey goodness!

Sooo, if you haven't heard of, or tried savoury granola yet, trust me, you need this in your life!!!
It is an amazing addition to so many different meals...soups, salads, eggs, you could use it as part of a savoury crumble on a fish pie....the possibilities are endless!..
it's also incredibly versatile...this one is rosemary and garlic, but you could add any kind of herbs and spices you fancy...I've made one with Cajun style spices before which was utterly delicious!
You can also add whichever seeds or nuts you feel like, you don't need to stick to this recipe, its a guide that you can play around with until your heart is content!!
Seeds are a wonderfully healthful ingredient, full of healthy oils and fatty acids, vitamins, minerals, fibre, protein and great for digestive health, so a handful of this is not just delicious, it's also really nutritious......I always have a jar or 2 of this knocking around in my kitchen!
So, I shall babble no longer and give you the goods!
Ingredients:
Sunflower seeds
Pumpkin seeds
Poppy seeds
Chia seeds
Sesame seeds
Linseeds
Water
drizzle
Himalayan Rock salt
Black pepper
Dried Rosemary
Dried garlic granules.
Preheat your oven to around 170 or gas mark 3.
Mix all of your seeds together, with the herbs, salt & pepper, add a drizzle of oil and a little water.
with the water, you just want to get the mixture damp...basically you want the chia seeds and linseed to absorb the water and swell up a little with helps the mixture to clump together to for that gorgeous granola crunch.
leave the mix to sit for around 20 minutes to allow this to happen.
Once your mixture seems like it holds together a little, then tip it out into a baking tray lined with a baking sheet and flatten it out with the back of a spoon.
you should end up with what looks like a large seedy cookie, maybe half a cm thick.
pop this into the oven and let it cook for around 10 minutes, take it out, break it up a bit and cook for a further 10 minutes to brown the edges and crisp up a little. (keep an eye on things at this stage as you don't want it to burn).
Once the time is up, take it out of the oven and allow to cool, before crumbling it into your desired consistency and transfer into a jar...this will keep for a few weeks, not that it ever lasts that long in our house!
see, easy! and the flavour combination possibilities are endless!
